Made these quick and easy bagel bites this morning. I calculated the carbs and just one bagel bite has 5 total carbs. Therefore, these aren’t a great option if you are in the phase of your keto diet where you are trying to stay under 20 grams carbs a day for ketosis. Rick and I have achieved our goal weights and have increased our daily carb intake to 50 grams/carbs a day. I call this eating “dirty keto”. It’s eating low carb but not so low to achieve ketosis. We are now eating dirty keto to maintain the weight we lost during our ketosis phase of our diet. For more info on our keto diet you can check out my blog series HERE. By increasing our carb intake from 20 to 50 grams a carb a day we are enjoying recipes like this one. If you are eating low carb and like everything bagels than this is a recipe to save. I’m sharing the keto bagel bite recipe that I made this morning. Eat with a smear of cream cheese or real butter (both keto friendly) and enjoy!
THE INGREDIENTS
I’m a big fan of recipes that you throw all the ingredients into a bowl, mix them up and plop them on a pan to cook. That is basically what this one calls for. Put the following ingredients into a bowl together and mix.
- 2 C ALMOND FLOUR
- 1 TBSP BAKING POWDER
- 2 OZ CREAM CHEESE
- 3 C MOZZ CHEESE
- 2 LARGE EGGS
- EVERYTHING SEASONING
MIX TOGETHER
Incorporate the ingredients above into a large bowl. You could use a stand mixer but I used a wooden spoon. I found that the mixture is dry so I popped the bowl and all ingredients into the microwave for about 30 seconds. Be careful, you don’t want to cook the ingredients, just softened them enough to be able to mix together a little easier. Once mixed, roll dough into small balls and slightly flatten placing them on greased cookie sheet (I use spray avocado oil).
BAKE
Once dough balls are placed on non stick cooking sheet, sprinkle desired amount of everything bagel seasoning (I buy the seasoning at Kroger) onto the dough balls. Bake in pre-heated oven for 20 minutes at 400 degrees. Let cool and enjoy!
